TOFU.
Tofu is made from soybeans which contains calcium and is high in complete proteins. It can be served to baby's over 7 months of age. Initially, I would combine it with fruits or veggies and blend it with my hand-mixer. The taste of the fruit or veggie is a little less intense and the food has some extra nutrients. Now I primarily use tofu as a finger food. Zel is always ready to eat before I'm ready to "cook", so I give her finger foods to head off her frustration. Simply cube or slice the tofu and serve it up!
A few hints: Tofu needs to be stored underwater and refrigerated. Each day (or almost each day), I dump the water out and put fresh water in. The book* says that treated this way, tofu will keep for a week... but we keep ours for weekS and have never had a problem. You can also freeze tofu (underwater), but I tried that last week and the consistency changed a little bit. It still tastes fine and Zel didn't mind one bit, but I probably won't freeze it again.
